Fermentation in small capacity mills with temperatures between 22 and 24 °C. Gently decubate by gravity to avoid late extraction of green tannins. Aging in stainless steel tanks for 12 months.

Garnet color and complex aroma of fresh fruit and spices. It is fresh, safe and with a persistent aftertaste.
